  Greek Lenten cookies - Keghke/kaak So good with cup of coffee to dunk in Yumm! Presented by TEAM AIC Armenian & International Cuisines and More makes around 50 cookies Ingredients ½ cup Greek extra virgin olive oil ½ cup white sugar ¾ cup freshly squeezed orange juice ¼ cup Greek ouzo* 2 teaspoons orange zest 500gr (1 pound) self rising flour ½ cup (or more) sesame seeds and 2-3 tablespoons ouzo for sprinkling Instructions In a large bowl we mix all the ingredients together, except sesame seeds and the extra ouzo. We do not overmix. We shape into cookies. We put 2 inches apart on baking sheet. With a pastry brush we glaze the cookies with the rest of the ouzo and we sprinkle with the sesame seeds.  To try some of these recipes and add my comments: 1. Carrot cookies, no bake 1 cup raisins 1 cup baby carrots ½ tbsp. pure vanilla extracts powder ¼ cup slivered almonds Instructions In a food processor combine all the ingredients (except almonds) and pulse a dough starts to form. Take it out in a bowl and fold in slivered almonds. Prepare a cookie sheet with parchment paper. Divide the dough into 6 equal parts and form round cookie shapes between palms. Place the cookies gently on the cookie sheet and freeze it for 10 minutes. Take it out and enjoy immediately or store in the refrigerator in a glass container.
